Roasted Red Pepper Feta Dip

 

Ingredients 

  • 4 red peppers 
  • 6 ounces feta
  • ½ teaspoon salt 
  • ¼ teaspoon black pepper

Instructions:

  1. Preheat the oven to 425°F. 
  2. Place the red peppers on a baking sheet and bake at 425°F for 40 minutes until the skins begin to blacken. 
  3. Remove from the oven and allow to cool slightly before peeling. 
  4. Once cooled, remove the skins from the peppers, and cut out the seeds. 
  5. Pat dry with paper towels to absorb the extra moisture released during the cooking process. 
  6. Place the roasted pepper pieces in a food processor along with the feta, salt and pepper. 
  7. Blend until the feta and pepper are blended together to form a dip consistency.
