Roasted Red Pepper Feta Dip
Ingredients
- 4 red peppers
- 6 ounces feta
- ½ teaspoon salt
- ¼ teaspoon black pepper
Instructions:
- Preheat the oven to 425°F.
- Place the red peppers on a baking sheet and bake at 425°F for 40 minutes until the skins begin to blacken.
- Remove from the oven and allow to cool slightly before peeling.
- Once cooled, remove the skins from the peppers, and cut out the seeds.
- Pat dry with paper towels to absorb the extra moisture released during the cooking process.
- Place the roasted pepper pieces in a food processor along with the feta, salt and pepper.
- Blend until the feta and pepper are blended together to form a dip consistency.
